Breakfast Frittata
1 dozen free-range eggs, scrambled
8 oz. Gruyere or Fontina cheese, grated
1/4 cup fresh grated parmesan cheese
1 cup organic full fat milk (or almond milk unsweetened)
1/4 cup fresh basil, chopped
2 Tablespoons parsley, chopped
1/2 teaspoon sea salt
1/4 teaspoon pepper
2 Tablespoons butter
1 large onion, minced
1/3 cup of cooked, crumbled bacon or sausage or both
1 cup mushrooms, sliced
1 package frozen chopped spinach, thawed and squeezed dry
1 cup grated zucchini, squeeze dry
Sauté onions and mushrooms in butter until tender. Add in spinach and zucchini and cook until all moisture is gone. In large mixing bowl mix eggs, Gruyere cheese, milk, basil, parsley, pepper and salt. Stir in onion, mushrooms, spinach, zucchini and bacon/sausage. Pour into 11×13 pan that has been sprayed with non-stick spray. Top with Parmesan cheese. Bake at 350 for 50-60 minutes or until knife inserted comes out clean.
Easy Overnight Oatmeal
4 cups Almond Milk
2 Cups steel-cut oats (or whole rolled oats)
2 Cups chopped Apples
1 Cup chopped walnuts
1/4 cup Brown Sugar
1 cup raisins or dried cranberries
2 Tablespoons grass-fed butter
1 teaspoon cinnamon
1/2 teaspoon Pink Himalayan salt
Coat the inside of a slow cooker with non-stick spray.
Combine all ingredients.
Cook on low for 7-8 hours
Cauliflower Pancakes
Season and roast a head of cauliflower
Take a couple florets
Finely chop
Use egg & coconut flour (or flour of preference) as binder
form the pancake and cook till golden

Smoothie Recipes
Protein smoothie made with 8oz Unsweetened Almond Milk, Unsweetened Cashew Milk or Unsweetened Coconut milk and one serving of whey protein powder.
Add 1/4 cup walnuts or almonds to any of these recipes for healthy fats.
Green Giant – 1 Tablespoon of “greens” (Garden of Life or Barleans) 1 handful of organic spinach and 1/2 organic green apple (peeled). Add Stevia to sweeten if necessary.
Cocoa Mocha – 1 Tabl. Cacao powder and 1 Tabl. Flax seed (grind in dry blender then add liquid) 1/4 cup cold brewed coffee and 1/2 organic banana.
Harvest Spice -1/2 cup canned organic pumpkin, 1/2 organic banana and 1 tsp. pumpkin pie spice, (may need water to thin) and sprinkle of cinnamon and nutmeg.
Berry Madness – ½ cup of organic berry blend fresh or frozen, 1 large handful of organic spinach/baby kale mix and 1/2 organic pear.
